Hi all! It’s Sarah here with another scrumptious meal planned for you all!
I’m spending the summer alone, as my husband Kevin is off doing his lawyer-in-training thing in another city. While this is a very sad thing, I’m taking the opportunity to prepare some things for dinner that he wouldn’t be too happy to see on the table! Think vegetarian meals, seafood, avocados, and mushrooms (if you like all of these things too, check out my “I want to try this while Kevin is away this summer” board on Pinterest). Tuna patties definitely fall into this category.
These Tuna Patty Melts were a healthy dinner and oh so delicious. Not to mention really, really easy to make! All you have to do is throw a can of tuna, chopped fresh cilantro, green onions, diced jalapenos, Panko breadcrumbs, an egg white, reduced fat mayonnaise and/or Greek yogurt (I just had vanilla yogurt, so I just stuck with the mayonnaise) into a bowl, season it up with some lemon juice, salt, pepper, and paprika, and mix it all up. Next, just form into patties and cook on a skillet until brown! Super simple! I topped each patty with a half of a slice of reduced fat pepper jack cheese and some low fat sour cream and salsa.
I served the patties with some home baked tortilla chips made from corn tortillas and salsa, as well as a side of sliced strawberries.
These patties were just bursting with flavor, so they aren’t super fishy tasting.
This made for the perfect quick summer meal!
