Ice Cream Crepe

Sometimes a good treat does a body (and soul) some good. These days, I try really hard to stay away from gluten and/or dairy-filled desserts, because it just does not make me FEEL good shortly after I eat it.

These crepes are by far the most decadent and delicious dairy/grain-free treat I’ve concocted. I made this for Valentine’s Day, so it’s probably a special occasions splurge for us.

I used Stupid Easy Paleo’s Simple Paleo Tortillas for the crepes (just add vanilla). I’ve made these as tortillas before, and they made for pretty-good-but-kinda-depressing tacos; but they are awesome as crepes. This coming from a girl who was ALL about the crepes in Paris.

All About the Crepes

This picture was taken as I chowed down on my second crepe of the day after I had spent the entire day throwing up my first crepe all over the streets of Paris. It was that good.

Anyway, back to the other crepes…

The crepe recipe makes 3 tortillas/crepes. I just swirled the batter higher up on the pan to make 2 bigger crepes, so that I could stuff in more ice cream and goodies.

I sliced up some bananas and strawberries very thinly. Then I put down a row of bananas in the middle of the crepe and topped it with three half-scoops of chocolate coconut milk ice cream (I like Coconut Bliss). Top ice cream with strawberries. Roll up crepe and drizzle with chocolate syrup (I melted some Enjoy Life Chocolate Morsels with some coconut oil; when it hit the cold strawberries it hardened like Magic Shell, which was a neat effect).

You could also top this with coconut milk whipped cream, a paleo Nutella-like spread like this one, chopped nuts, cherries, blueberries, pineapple chunks, coconut flakes, anything really. Making this a fun, easy and functional dessert!

Ingredients
  • 2 Simple Paleo Tortillas
  • Half a banana
  • 5 Strawberries
  • Coconut Bliss Chocolate Ice Cream
  • 1/2 TBS coconut oil
  • 1 TBS Enjoy Life chocolate chips
Instructions
  1. Prepare Simple Paleo Tortillas batter. Don’t forget to add the vanilla.
  2. Crepes can be made larger by using a larger pan than the recipe calls for or by swirling batter higher up in the pan.
  3. Melt coconut oil and chocolate chips (I just eye-ball the measurements) to make chocolate sauce.
  4. Top crepes with bananas, half scoops of ice cream and strawberries.
  5. Wrap up crepe and drizzle with chocolate sauce.

I’ve been doing a little re-decorating after we moved. New space needed some new colors. Plus I was getting really tired of the old color scheme.

And in an effort to protect my circadian rhythm, I re-did all of my bedding. I wasn’t sleeping very well, so I got new sheets, pillow and duvet cover. Freshening things up in the bedroom was one thing that helped me get 8-9 hours of good sleep every night.

But in order to keep the costs at bay, I pulled out my old friend, the easy DIY envelope pillow case. I bought some cheap pillows from Goodwill and some fabric from Jo-Anns (with a coupon) and went to town making pillow covers.

I’ve experimented with several different pillow cover techniques (throw pillows are my favorite way to decorate and personalize my home), and this seems the easiest and quickest way.

Here’s how:

A few easy steps

First, measure your pillow. And then add 1/2″ to both sides. My pillow was 17 1/2 X 17 1/2″ so I cut my first piece to be 18 X 18″. For the back panels, I divided 18 by 2 and added three inches (18/2 = 9 +3 =12. So I cut two pieces to be 12 X 18″.

Next, take each side panel and pin a double fold in place along the long (18″) end. You do this so your envelope back does’t have a raw edge. I fold the edge once about 1/4″:

And then fold it in again:

I place the pins in as I go along.

Pin it up

I don’t press the seam, because I want this to be quick. I just sew right down the middle, removing the pins as I go.

Sew up the sides

Next, place your front, big 18 X 18″ piece right-side up. And place the first back panel right on top, right sides together, with the corners matching up. Do the same with the second back piece, so that the two back pieces overlap, like this:

Next, pin the three pieces together with a 1/4″ seam allowance.

And trim off all four corners.

Fold it right-side out and stuff your pillow into it. And that’s it!

Now do 4 more. And you have a lovely array of pillows on your bed.

Re-Syled Storage Solution

So far this year, I’ve spent a whole lot of time focusing on whole foods and a healthy body. I’ve been doing tons of meal planning, prep and cooking. And I’ve starting running again. Plus, I’ve started up a daily physical therapy program that I hope with help me with my numerous pelvic floor issues. But I think it’s about time to get my craft (back) on!

Kevin keeps all of his work clothing in our guest room (i.e., the room in which we blow up our air mattress) and uses it as a staging area to prepare for his daily bike commute to work. All of the clothes and ties hang in the closet, and his sweaters and other garments fold up nicely on the built-in closet shelf. But what wasn’t working on the shelf were all those socks. It was a mess.

I told Kevin, “I’m going to make you a sock basket! And label it ‘socks’ so you don’t forget where the socks go!”

Off I went to the local Goodwill. They have quite a nice collection of baskets on the cheap. This one was light brown, nothing to speak of. But was deep and would fit lots of socks.

I took it home and gave it a coat of spray paint.

You could give it a couple of coats if you’re after a bolder color. I liked the look of one coat.

I didn’t bother spraying the bottom or the inside. No one’s going to see that.

I then made a basket liner out of some blue fabric I had leftover from another project. I simply traced the bottom of the basket and added 1/4″ seam allowance to all sides. Then I traced the side of the basket, again adding 1/4″ seam allowance plus about 4″ to the top for the overhang.

I sewed all the pieces together and added about a 1/2″ seam at the end of the liner in case I wanted to add ribbon to cinch the liner around the basket. I didn’t end up liking the look of this, so to make the liner a bit more fitted around the basket, I folded up the corners and added a bit of hot glue.

Next up, the label! I had a mini magnet picture frame that I had saved for just such a crafting occasion. I ripped off the magnet and as much of the backing as I could. I used sparkly gold washi tape around one of the inserts and added a clear label I made with my label maker. Then I put a hot-ton of hot glue on the back of that thing and stuck it to the basket.

A few easy upgrades to a cheap-o basket made for a cute little addition to our storage problem. I enjoy a re-styling success. It makes me pretty happy! There was then nothing left to do, but fill that basket up with socks!

Whole 30 Meals Days 8-11

Gotta play a little catch up!

Day 8 looked like this:

Breakfast was the usual eggs, veggies and blackberries. With some black tea. Forgot to snap a picture. That’s probably ok, since this meal is getting a bit old.

Lunch was a salad from Whole Foods. I like to pile my WF salads with beets, since I don’t get that very often in the wild.

After Kevin working late and two hours at the gym, dinner would have been really late if I made something so Chipotle made an appearance! You can’t really see it under the lettuce, but that guac hit the spot!

We like bacon on the weekends. So Saturday was bacon and fried eggs. With carrots and tea. I’m beginning to get REALLY lazy with my breakfast veggies.

And this is where I start failing at picture taking again.

Lunch was part deux of Whole Foods salad. I topped it with grilled chicken once I got home.

And dinner was a WFs rotisserie chicken. Be very careful when selecting your rotisserie chicken, because only a couple are Whole30 compliant. I served this with green beans and sweet potatoes.

Food’s getting a bit boring around here, so I have some meals planned for this week that will hopefully spice things up a bit!

Week 1 is in the bag!

At this point, I’m kinda missing a few things I normally allow myself to have. White rice, occasional butter and popcorn, smoothies,…Paleo banana bread. Even though this is how I eat MOST of the time, the strict Whole 30 guidelines are really making me crave things I can’t have. It’s funny how our mind works in that direction when we tell ourselves we can’t have something. Or at least mine does. Catch my tweet about dreaming about going to McDonald’s and stressing about trying to find a Whole 30 compliant menu item? (Spoiler: it didn’t happen). I’m not even sure when I’ve last been to a McDonald’s, but the Whole 30 has me dreaming about it!

On a positive note, I’ve been sleeping really well, minus the crazy about-to-wake-up dreams. Thanks Whole 30!

For breakfast: Onion, spinach, and red pepper egg scramble with avocado, salsa and a half of a banana.

Dinner was chili with a plop of guacamole and a side of cucumber salad (from Well Fed). I didn’t really follow a recipe for the chili. Just dumped in what seemed to be appropriate amounts of sausage, ground beef, green chilies, tomatoes and sauce, roasted red peppers, green peppers, onions, hot sauce, red pepper flakes, cumin, and garlic powder. It was good.

Whole 30 Day 6

I had raw red pepper for breakfast yesterday. My friend Justine’s response to that: “Yuck.” And I agree. Eating raw veggies for breakfast took some getting used to. I’ve lately been testing my tolerance of eggs (right now, I’ve been eating eggs and it seems to be going ok). But for a while, I was laying off the eggs and eating things like chicken, steak or fish for breakfast. That’s what this dietary lifestyle choice forces you to do sometimes: stop thinking in terms of breakfast, lunch and dinner and starting thinking meals 1, 2, and 3. In the Simpson house, we often eat breakfast for dinner, so why not dinner for breakfast? And raw veggies for breakfast!

Day 6 was a winner. Here’s how it went down:

Breakfast was hard boiled eggs, veggies and a banana with almond butter.

Lunch was left over from the night before. I had it with grilled chicken this time and a bit of salsa. Blackberries and pistachio nuts on the side.

Dinner was a bit of a challenge last night. After a bit of a personal set-back, I really wanted comfort food (emotional eater, right here!) So I said, “Five Guys!” Luckily, Kevin was there to talk me down and we had a bun-less burger with bacon, tomato and avocado. Potato wedges, broccoli, and applesauce on the side. It was a Whole 30 win!

Whole 30 Meals Day 5

Whole 30 Day 5

The Whole 30 is going great so far. I’ve lost my too-much-junk-food-and-bloated feeling I got after all the holiday munching. My digestive system is on track to normalize. And I’m feeling hungry when I wake up in the morning (I normally wake up with a stomach ache and have to wait an hour or so before I can eat).

Kevin and I have noticed we’ve been a bit hungry since starting. So we may try to up our protein and fat intake. It’s been a Whole 30 pattern for me that I start out being hungry for the first week, but my body gets used to it after a week or so and my meals end up being plenty satiating.

On to the food!

For breakfast I had scrambled eggs with salmon and salsa plus some cooked spinach on the side. I cooked up the black hash browns (we keep it real at Domestically Made. This is true life). They tasted fine, they were just black. I’ve never frozen potatoes before, so this was a learning experience for me. I’ve since done a lot of potato prep research online and may do things differently next time.

Lunch was leftover meatloaf and broccoli with sweet potato. Pistachio nuts on the side. My fave!

Dinner was delightful! I turned these Paleo Tacos with red cabbage and mango slaw into a salad. Kevin’s not really into pretending that a lettuce leaf is a taco shell. But he gets excited about taco salad! I topped it off with a half an avocado each.

It’s burrrrrry cold and stupid windy here in Tulsa this afternoon. I’m staying in and bundling up with the pup to do some afternoon reading!
